Professor of Medical Physiology at the University of Copenhagen
Professor Jens Juul Holst is a prominent figure in the field of Medical Physiology, serving as a Professor and Deputy Head of the Department of Biomedical Sciences at the University of Copenhagen. He is also the Research Director at the Novo Nordisk Foundation Center for Basic Metabolic Research. His research primarily focuses on regulatory peptides from the pancreas and gut, particularly their roles in gastrointestinal function and metabolism, with special emphasis on blood glucose and appetite regulation, obesity, and diabetes. Over his career, Professor Holst has published more than 1,000 research papers and consistently produces 20–35 publications annually. He is a member of several prestigious academic organizations, including the Danish Academy for Natural Sciences and the Royal Danish Academy of Science and Letters, and serves on the editorial boards of several scientific journals. With over 30 years of experience, he is also a well-regarded teacher of endocrinology at the University of Copenhagen. He teaches courses such as "Diabetes - a Global Challenge" and "Diabetes – the Essential Facts."

Signe Sørensen Torekov, M.Sc. in Human Biology and PhD, is an Associate Professor at the Department of Biomedical Sciences at the University of Copenhagen and a member of the Novo Nordisk Foundation Center for Basic Metabolic Research. She completed her PhD at the Steno Diabetes Center/Hagedorn Institute in Denmark and pursued postdoctoral research at the University of Copenhagen. With over 10 years of experience in clinical translational research, Dr. Torekov focuses on the pathophysiological and genetic aspects of obesity and diabetes. She leads several large studies investigating appetite hormones that aid in weight loss maintenance and explores rare mutations in type 2 diabetes genes related to incretin signaling. Additionally, she teaches endocrinology and supervises students at the University of Copenhagen, offering courses such as "Diabetes - a Global Challenge" and "Diabetes – the Essential Facts."
